Few things say ‘Palestinian morning’ like a warm man’oushe — flatbread baked with olive oil and za’atar until fragrant and golden. It’s simple, ancient, and endlessly comforting.
Ingredients
- 2 cups flour, 1 tsp yeast, 1 tsp sugar, ½ tsp salt, ¾ cup warm water, 2 tbsp olive oil (for the dough)
- 4 tbsp Zuwadati Za'atar
- 4 tbsp Zuwadati Extra Virgin Olive Oil
Method
- Mix and knead the dough until smooth, then let it rise for about an hour.
- Stir the za'atar with the olive oil into a loose paste.
- Roll the dough into rounds, spread generously with the za'atar oil, and bake at 220°C (430°F) for 8–10 minutes until the edges turn golden.
Serve hot with fresh tomatoes, cucumber, olives and a glass of sweet tea. Sahtein — to your health, and double the pleasure.
